We are back from vacation and it’s time to get back to healthy eating. So today I’m making pork (recipe I previously shared) for the week. Here are a few pictures of it, fresh pico and guacamole.
For the pico, I do equal parts of tomatoes and onion, 2 jalapenos (we like it hot), cilantro, lime, cumin, salt and pepper. The hardest part is chopping.
Mix it all together and refrigerate for an hour or longer. Then serve!
For the guacamole… take 2 avocados, 2 limes, 1 small onion, cilantro, cumin, garlic powder, salt and pepper.
Cut the avocados in half, remove pits and scoop out of skin. Place in a bowl and add the juice of limes then mash with a fork. Next stir in tomatoes, onion and cilantro. Season to your taste.
