I kept looking at my counter filled with tomatoes and wondered what to do. Finally, I decided I was going to make marinara.
Marinara is a staple in our house, as in most. I routinely spend over 10 minutes looking at the backs of marinara jars when I go to the grocery store, because I never remember the brand I buy.
This marinara is simple and easy. I took the home grown tomatoes my husbands father and grandfather grow and cored them with my trusty gadget, added onion, garlic, salt and pepper, then roasted them in the oven at 425 for about an hour.
Then I cooled and drained them into a bowl. Once they were drained, I placed the tomatoes in the food processor with fresh basil.
While they were blending, I added a little of the juice from the drained tomatoes to get the consistency that we like.
Place sauce in containers to store in refrigerator or freezer. I’m crossing my fingers that my husband will grow tomatoes next year so I can freeze enough marinara for the year. 😉 ENJOY!!!
